
For busy cooks out there, here are some recipes to help you to dinner on the table quickly, easily and economically. With a slow cooker entree Meat and potatoes, add a make-bean salad greens in advance and you're ready to feed your family a nutritious meal in no time.
Roast Pork with Onions and Potatoes
This recipe requires a 4-Slowcooker quarter for best results.
About 3 pounds boneless roast pork loin, cut fat
1 clove garlic, sliced
5 medium potatoes, washed, cut diced, unpeeled
1 large onion, sliced
3 / 4 cup water (or tomato juice if desired)
1 tsp to tablespoons low-sodium soy sauce
1 tsp tablespoons cornstarch
1 tsp tablespoons cold water
Make slits in the roast in insert slices of garlic. Place the roast to brown under the broiler. Place the potatoes in the casserole. Add 1 / 2 slices of onion. Place roast atop vegetables and cover with remaining onions. Combine water or juice with soy sauce and pour over roast. Place the lid on and cook Slowcooker heat about 8 hours. Before serving, remove roast and vegetables cook. Combine cornstarch and cold water. Add to liquid in slow cooker. cook Turn to high heat until liquid thickens. Slice meat and serve thickened liquid over meat and vegetables.
This recipe a few grams more protein than carbohydrates so it is excellent for diabetics who want to enjoy some good old "meat and potatoes".
Green Bean Salad
2 cans of beans French-style green, drained
1 small box small peas, drained
4 sticks celery, diced
1 / 2 Medium Bell pepper, diced
1 onion dice
1small pot of chili
Dressing:
1 1 / 2 cup Splenda
1 cup cider vinegar
1 tsp to teaspoon salt
1 / 2 cup olive oil
1 tsp tablespoons water
In a medium bowl, mix, mix all vegetables together.
To make the dressing in another bowl, combine all dressing ingredients. Pour dressing over vegetables, stir to mix well and refrigerate for several hours or overnight. One and a half hour before serving, drain vegetables. Note: This is a great dish to bring for convenience later.
