
As we approach the fall season, it is a busy time for most of us. He is particularly responsible for the families that children return to school. If you're a regular reader of my articles you know I'm promoting family meals. This is a recipe to make it easier for everyone. Bean-Bacon Chowder recipe is a perfect family.
BEAN BACON CHOWDER
1 1 / 2 cup dried beans (I prefer the Navy for this), well rinsed
2 cups cold water
6 slices thick cut bacon
Med 1 carrot, halved lengthwise, then cut into pieces about 1 inch
1 rib celery, chopped
1 medium onion, chopped
1 small turnip, cut into small pieces
1 tsp to Tea Italian seasoning mix
1 / 8 c. Tea freshly ground black pepper
1 can (48 ounces) reduced-sodium broth Chicken
1 cup milk
Soak beans in cold water overnight. Cook bacon in medium skillet over medium heat. Drain on paper towels. Crumble bacon. In a casserole, combine carrots, celery, onion, turnip, Italian seasoning, pepper, beans and bacon and stir to mix well. Pour broth over top. Cover and cook on low 7 1 / 2 to 9 hours until beans are tender crisp.
Remove 2 cups of soup mixture in a food processor or blender. Process until smooth then return to pot. Add milk, cover and heat over high heat for 10 minutes to heat through.
6 servings. Per serving: 270 calories, 20 g protein, 39 g carbohydrate
