
Okay, so these two recipes from my favorite site, and yes, they are my favorites to make. I can make minestrone vegetarian soon morning, let it cook, let the scent my house with kindness. Then after it's done I can make baked potatoes and cook, and let that meet my house with goodness even more. Mmmm, I'm getting hungry just typing this right now.
Okay, without further ADUE …
Vegetarian Minestrone
1 medium onion, chopped
2 medium carrots, thinly sliced
2 stalks celery, sliced 1 / tracks 2 inch
1 red pepper, seeded, cut in 1 / 2 inch pieces
1 medium zucchini, scrubbed, sliced in 1 / 2 inch rounds
2 cloves garlic, minced
2 14 1 / 2 oz. can vegetable broth
1 28 oz box of crushed tomatoes
2 15 1 / 2 oz. cans kidney beans, drained
2 v. Tea. dried marjoram
1 / 4 tsp. coarsely ground black pepper
1 1 / 2 cup cooked rice
Add all ingredients except rice to crock pot. Cover and cook on low 8 to 10 hours (high 4 to 5 hours). Add cooked rice and mix combine. Serves 8 people. Then turn it into another bowl (unless you have another pot going in the crockpot) and prepare for dessert ….
Baked Apples
6 medium or large potato
4 tablespoons peanut butter
1 tablespoon cinnamon
First remove the core of the apple. Then combine the peanut butter and cinnamon together. Whipped peanut butter seems to work best. Fill carrots with peanut butter and mix with cinnamon and place the apples in the crockpot to low setting for about 4 hours. Once completed, Apples can be eaten whole or cut into pieces.
