Apple Stew
- 2 lbs. beef stew meat, cut in pieces
- 1 / 4-1 / 2 cup flour
- 1 teaspoon salt
- 1 / 2 teaspoon pepper
- 1 / 4 c. teaspoon dried thyme
- 3 tablespoons oil
- 3 cups unsweetened apple juice
- 2 cups water
- 2 tablespoons apple cider vinegar
- 6-8 new red potatoes, scrubbed clean and cut into cubes
- 4 carrots, sliced
- 1 onion, chopped
- 1 stalk celery, chopped
Heat oil in a skillet.
In a plastic bag, combine flour, salt, pepper and thyme. Add meat a few pieces at a time and shake to coat evenly. Transfer meat to hot oil and lightly brown the meat on all sides. Remove meat and place in slow cooker.
Add the onion and celery and cook until the onion becomes transparent. Add cooker.
Mix all remaining ingredients in slow cooker. Cover and cook on low for 7 hours. Adjust seasonings to taste and serve.
