
Busy, busy, busy. We are constantly busy and pressed. But we can find time to prepare decent meals and were not dependent on fast food for all our livelihoods. Preparing meals at home is especially important if you have any children. Our children need to know what it's like eating a meal from their own kitchen. And I am a big fan of sit-down meals for families, as you know if you follow my articles. To assist in preparing meals easy and economical Here are some good recipes. The chicken soup is a vegetable soup lite is done in the crockpot. Throw everything in crockpot in the morning and come home to hot soup and pleasant. For dessert, make this quick microwave apple crisp. These two recipes are diabetic friendly.
LITE CHICKEN VEGETABLE SOUP
1 can (28 ounces) diced tomatoes, undrained
2 cups broth reduced Fat & Low-sodium chicken or vegetable
2 cups cubed or shredded cooked chicken
1 cup frozen whole grain corn
2 ribs celery, chopped
1 can (6 oz) tomato paste
1 / 4 cup of dried lentils, rinsed
1 tsp tablespoons Splenda
1 tsp tablespoons Worcestershire sauce
2 v. Tea dried parsley
1 tsp Tea dried marjoram
In a large pot, combine all ingredients. Cover and cook on low for 6 to 8 hours or until vegetables are tender.
1 cup = 140 calories, 17 g carbohydrate, 15 g protein
MICROWAVE Apple Crisp
6 cups sliced peeled tart apples
2 v. tablespoons Splenda
3 / 4 c. tea cinnamon, divided
1 / 4 cup water
1 / 2 cup all-purpose flour
1 / 8 c. Tea salt
2 v. 2 tablespoons + c. Tea Splenda brown sugar blend
3 c. tablespoons unsalted butter
In a bowl, combine apples with Splenda and 1 / 4 c. cinnamon tea. Place apples in a pan 8 inch square microwave safe baking dish. Sprinkle with water. In another bowl, mix flour, salt, mix brown sugar and remaining cinnamon. Cut in butter until crumbly. Sprinkle over apples. Microwave, uncovered, on high for 10-12 minutes or until apples are tender.
Yield = 5 servings at following per serving: 257 calories, 49 g carbohydrate, 2 g protein
