Put your Yamulki … here comes Hanukkah! Okay. It's official. This calendar year, the winter festival of eight days beginning on the same date as Christmas. Here's a hint. Whatever holiday you celebrate, choose foods high in fiber if you want to control overeating.

Foods rich in dietary fiber satisfy your hunger and make you feel full. In selecting the fiber recipes for Hanukkah, you can offer foods that could probably low fat absorption. That, my friends party, is a great advantage to avoid the dreaded weight gain holiday. Just remember the goal is to consume 25-35 grams of fiber per day.

The Hanukkah tradition of frying in oil is considered the culinary symbol of light a menorah. What would Hanukkah be without the Latke? There are still some well-loved dishes and food on the table, but you can easily modify these classics with a few precious grams of high fiber. Who knows? Maybe they will be part of family tradition for years to come.

Herbed White Bean and Zucchini Latkes Serves 6

Ingredients: 1 cup shredded zucchini (about 4 ounces) 1 small onion, chopped 2 tablespoons butter 2 slices white bread 3 tablespoons cream 1 clove garlic 1 (15 oz) white beans 2 eggs 1 tablespoon chopped cilantro or fresh ground 1 / 2 c. Tea dried thyme 1 / 2 teaspoon coffee dried chervil 1 / 2 teaspoon of basil oil (for frying) Directions:

1. Sprinkle lightly with salt zucchini and drain in a colander for 5 minutes. 2. Rinse well and squeeze in paper towels to remove all excess water. 3. Sauté zucchini with onion in butter until soft but not browned. 4. In a food processor sprinkle the bread with the cream. 5. Add garlic, beans, eggs, coriander, thyme, chervil, basil and blend until smooth. 6. Fold the fried zucchini. 7. Drop by spoonfuls tablespoons packed full with non-stick, lightly oiled skillet and cook for 4 minutes per side over medium heat or until Total Fiber that golden.: 4 grams per Latke

Cinnamon Apple Latkes 4-6 servings

Ingredients: 2 eggs 3 tablespoons sugar 1 tablespoon teaspoon of salt 2 teaspoons cinnamon 1 / 3 cup water 3 cups cooking apples, chopped 3 / 4 cup flour, unsifted 1 tablespoon Peel coffee, oil for frying, grated 1 / 2 cup sugar

Directions:

1. Beat eggs until light and fluffy. 2. Mix 3 tablespoons sugar, salt, 1 teaspoon cinnamon and water until consistency homogeneous. 3. Stir in chopped apple, flour and lemon zest and mix well. 4.
